I May Not Cook But I Can Create Some Amazing Low Carb Treats…

Today’s blog is brought to you by chocolate and peanut butter.  Is there a better combination?

It’s funny because I’m finding that, even though I’m eating less and much healthier, and I’ve lost all food cravings, I’m thinking about food more.  My favorite treat of all time is a peanut butter cup. In my opinion, peanut butter is one of the most satisfying foods on this planet.

After my thoughts of peanut butter cups, the next thing you know, I found myself in my kitchen, a room I usually try to avoid unless I’m pouring someone a cocktail at the island. Do I dare say I was playing or experimenting with food?  I always thought people who did that were kind of cray-cray. I put a few tablespoons of peanut butter in a bowl and brainstormed for ways to make my new treat healthier.  My eyes locked with the chia and flax seeds we keep by the blender for smoothies and I added them both to the bowl.  Once mixed, I put a tablespoon of the mixture in round balls on parchment paper.  I remembered one of my best takeaways from Flat Belly Diet – melting semi-sweet chocolate chips for dessert.  Which, by the way, the Flat Belly Diet has several fantastic chocolate dessert recipes!  I melted chocolate chips and adorned the peanut butter balls with the melted chocolate.  They set in the freezer for about an hour and came out a decadent low carb dessert!

  1. I love this! My husband made a keto version of it with coconut oil and it was a bit too heavy and fatty for me. I need to try adding fibers!
